Coriander Munchies

This snack is known as Dhaniya Panjiri i gave this name just like that, Yesterday was Gokukashtami, so we made this prashad for Lord Krishna. This is the first snack to eat as a prashad after the whole day fasting. This is also a wonderful snack recipe, it is very nutritious and tasty too. I thought to post this recipe yesterday, but the hectic schedule doesn't allow me to sit near the laptop & that's why i'm posting it today, sorry for the delay. If you need a healthy snack recipe, you're in, We had a lot of snack items for the pooja, so there is a chance my prashad get wasted so i made it with a small amount, you can make it according to your needs.



Ingredients:

Coriander Seeds - 1/4 cup

Sugar - 1/4 cup

Grated coconut - 1/4 cup

Cardamom - 3

Pistachios - 6

Cashews - 6

Black Sultanas - 6

Ghee -1 1/2 tbsp

Method:

Grind the sugar into fine powder along with cardamom



Heat some ghee and fry the cashews, pistachios & sultanas , set aside



Add coriander seeds and fry until the raw smell goes, grind it into fine powder



In the same pan add ghee, add grated coconut to it & fry till you get a nice aroma, set aside




Add few more ghee, fry the coriander powder  till you get a nice aroma and mix it with coconut



Add in the remaining ingredients



Stir it well, Serve & enjoy

Herbal Sweet Lime (Mosambi) Juice

Hey guys, this is my second post today. Hope you didn't get bored with my recipes, even i post 2+ nos a day. It's because our climate was little more sunny yesterday. So i thought to prepare a cooling and refreshing drink, without a second thought i got this recipe. We often make this recipe in summer because the basil will give you a refreshed feeling, even you sweat out a lot & the mosambi will relieve the tiredness in you, so let's get started.





Ingredients:

Sweet lime (mosambi) - 8

Basil - 10-15

Sugar - 4 tbsp

Ice cubes

Method:

Peel the mosambi, remove the seeds & blend it in the juicer




Filter it in bowls



Meanwhile dissolve the sugar in 1/2 cup of water



Take the basil leaves in a bowl



Crush it by adding 1/2 cup of  mosambi juice



Crush until the basil releases its flavours, then mix everything together. Add the ice cubes



Serve it chilled

Spicy Chicken Curry

Hey guys, hope you all fine & good. Chicken Curry is always a spicy and a tasty one, we always have a dry roast or dry fry recipes as side-dish. Here i've prepared a thick curry you can even mix this in your rice and eat, I've made this as a side-dish to my Kothagiri Chicken Curry, so let's see the lip smacking recipe.



Ingredients:

Chicken - 1/4 kg

Ginger Garlic paste - 1 tsp

Chilli powder - 1 tsp

Turmeric powder - 1/2 tsp

Coriander powder - 1 tsp

Chicken masala - 1 tsp

Garam masala - 1/2 tsp

Curry masala - 1/2 tsp

Curry leaves - 8

Salt

Oil

To grind:

Small Onion - 8

Big Onion - 1

Tomato - 2

To Marinate:

Turmeric powder - 1/4 tsp

Chilli powder - 1 tsp

Ginger Garlic paste - 1/4 tsp

Curd - 1 tsp

Method:

Marinate the chicken and set aside for 20 mins, Grind the items given under 'to grind'



Heat oil and add the grounded masala along with the curry leaves



Add the Ginger Garlic paste .



Fry it in the oil until the raw smell goes off (approx.4 mins), Add the masala powders and fry it for 3 mins



Add the marinated chicken and add  1/2 cup water



Fry and allow the chicken to boil until all the water is absorbed and forms a curry like consistency



Once the oil seperates & the chicken is cooked, switch off the stove and transfer to a bowl



Serve & enjoy

Kothagiri Chicken Curry

I always try to write this recipe in my blog everytime we make this and i'll end up by forgetting it, but this time yes, i finally posted it. This is a lip smacking Curry which will go well with rice, idli and roti. A year back my sister got this recipe and we are making this curry often



Ingredients:

Chicken - 1/2 kg 

Onion - 2

Tomato - 2

Green Chilli - 1

Ginger Garlic paste - 1 1/2 tsp

Chilli powder - 1 tsp

Salt

To marinate:

Chilli powder - 1 tsp

Coriander powder - 1tsp

Turmeric powder - 1 tsp

Salt - 1 tsp

To roast & Grind:

Rice - 1 tbsp

Toor dal - 1 tbsp

Pepper - 1 tbsp

Coriander -3 tbsp

Fennel - 1 tbsp

Jeera - 1 tbsp

Fenugreek -1/4 tsp

Mustard - less than 1/2 tsp

small red chilli - 4

Cardamom  - 2

Clove - 1

Cinnamon - 2

Method

Marinate the chicken pieces and set aside for 20 mins



Dry roast and grind the ingredients given under 'to roast'



Heat gingelly oil in a pan and add onion, saute it for 3 mins



Add tomato and fry



Add ginger garlic paste



Add the marinated chicken pieces



Add the ground masala



Add chilli powder and salt



Keep some ginger garlic paste water , we usually use this in our recipes along with plain water, which will give an extra flavour



Add 2 cups of water



Allow the curry to boil until the chicken boils, the gravy thickens



Add the coriander leaves



When the oil seperates switch off the gas



Serve hot

Sweet Masala Banana

Hey guys, hope you all doing good, ok this time I had come with a snack recipe. This is a quick recipe , you can make this , if you have an uninvited surprise guests at home, because it's much easier to make. I got this recipe 2 years back from my friend. Let's move on to the recipe



Ingredients:

Banana - 3

Sugar - 2 tsp

Cinnamon - 3 to 5 small sticks

Cardamom  - 4 pods

Pepper - 6-8

Ghee - to shallow fry

Method:

Get the Spices ready



Grind the spices



Mix Sugar with the ground spice powder



Heat ghee in a pan



Cut the banana 2" long in small pcs



Add the banana in the pan when the ghee gets heated



After 2 mins flip it to the other side



Fry it , after 2 mins flip it and add the spice mixture to one side



Flip it and add the spice mixture to the other side



Fry for 2 more mins by flipping each side till the masala gets cooked and the raw smell goes off. Serve & enjoy
